Eating healthy means a lot of home cooking because it is nearly impossible to find anything at a quick takeout place.  Having diabetes makes it an extra pain in the rump when eating things I don't make myself.  Every carb has to be accounted for and countered with the proper amount of insulin.  This has become my fall back option when I am in need of a fast meal.  
1 chicken sausage
1/2 cup egg whites
1 cup fresh spinach
10 grape tomatoes
salt/pepper to taste

Anyone have any good recipes?  I always like checking out what people eat!

  2. That looks delicious. I am all for one egg or egg white scrambles. I would much rather have more veggies or meat than piles of eggs.
