Rainbows and rain clouds

Summer is in full force here in Florida, it's been raining everyday.  My current rainy day activity obsession has been crocheting these rainbow potholders.  They work well as mug rugs or trivets too.  No better way to brighten up your day thank looking at a rainbow.

A stitch itch

The Mr. was having a birthday last month and I wanted to make something for him so I found a pattern for the most adorable Star Wars cross stitch by weelittlestitches on etsy.  I actually picked up the entire Star Wars set but I only made this one for the actual birthday.  Right now I am working on the "enemies" set and then I will move on to the "allies".
I plan on framing it so it can go into the "computer/man cave".  

Have you seen what Daniel Kornrumpf can do with some stitches?  His stuff is amazing, I'm in awe.

I like to eat, can you tell?

These Spicy Tuna rolls are homemade.  They were easy to make and a fraction of the cost and just as delicious as going out for sushi.  For my first time I went for a pretty simple roll but next time I think we are going to go all out and make an assortment of tasty treats.
Sushi Rice, which is is probably the hardest part of making sushi.  I'm half Korean if you didn't know and I buy my rice in 20lb bags but I'm sure you can find smaller amounts ot there.  Just make sure you stay away from that long grain need the short sticky stuff.  You can find a recipe here I've been making it for so long I don't really measure.  I wash the rice until the water runs clear, put it in a pot and add water.  Again, I don't measure exactly I put my finger in th pot and I can just tell the ratio of rice to water by my finger.  I realize most people can't do this, the bag of rice should have instructions.
Then you need to make the vinegar mixture and mix it all together.  Again, you can find the rice recipe here.  I only use about 1/4 of the liqud stuff for 2 cups of uncooked rice but that is my personal taste preference.
You'll need a rolling mat.  I always see the Sushi guys with plastic wrap on their mats, I would suggest doing the same if you are making insideout rolls (the ones with the rice on the outside).  Get a piece of nori (seaweed) and press your rice into it.  Then flip that bad boy over.
You'll need some tuna.  I would be vary careful here if you're using the raw stuff.  *consume at your own risk* I'm not taking any responsibility for anyone who gets themselves sick.  I bought sushi grade tuna from a local fish market, I wouldn't go near the stuff they sell in my local grocery stores.  If you want you can always cook your fish, be safe.  You can put whatever you want in your rolls.  Just put your items on the rice in a line and roll it up.  Easy peasy.  I wish I had more photos but I got sidetracked and completely forgot.  Like I said the rice is the hard part.

It's been awhile

Who knew having two dogs would be so draining?  Marley and Belle are getting along better each day.   The little bit likes to bite and Marley will take it for a little while, she's such a sweetheart.  
When I picked Belle up from the rescue she was 6lbs malnourished, filled with parasites, and experiencing non stop explosive diarrhea. 
Four weeks later... she is now almost 14lbs and filled with nothing but energy.   

I can't imagine life without pets no matter how large or small they are.

Let's get summer kicked off right with some s'mores bars.

  • 1/2 cup butter, room temperature
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/3 cups all purpose flour
  • 3/4 cup graham cracker crumbs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 or 5 milk chocolate bars (I used Hershey’s the multi packs were buy one get one free)
  • 1 1/2 cups marshmallow creme/fluff (not melted marshmallows)
  1. Preheat oven to 350°F. Grease an 8-inch square baking pan.
  2. In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined.
  3. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread chocolate with marshmallow creme or fluff. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small shingles and laying them together).
  4. Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars.
